Pat & Molly – A Love Story
My husband and I love food. We love growing it, we love cooking it, we love eating it. Food is fun and our kitchen is our playground. Pig & Olive came about with this idea in mind. We wanted to make great food using quality ingredients and showcase local farms around the Flathead Valley.
My name is Molly Burns, my husband is Patrick, and with our staff, we are Pig & Olive sandwich shoppe. Our menu is an eclectic mix of innovative and traditional gourmet sandwiches, salads, sides, and soups. We butcher, boil, roast, cure, pickle, slice, dice, saute, and sauce it up for our guests everyday, which is another way of saying we prepare every menu item from scratch daily.
Pig & Olive is an environmentally conscious company, sourcing sustainable ingredients from as many local farms as possible. From the luscious lamb from Hansens Farm to the multi colored eggs from Earthstar Farm, these items are exclusively available only in the Flathead Valley. To promote less waste and conscious consumerism we recycle, donate our raw vegetable and fruit scraps back to the farmers to feed their animals, and give our used fryer oil to those with biodiesel automobiles.
The name, Pig & Olive, came from our logo, which was meant to represent meat and garnish. The logo also reminded us of a time when sandwiches were topped off with an olive and a toothpick and were the height of a sophisticated lunch. Some guests have told us that the Pig & Olive logo should stand for the great meats in our sandwiches and fresh produce in our salads. Whatever your take on the logo or name, Pig & Olive represents great local food.
